Simon Poulat è nato a Lione il 12 novembre del 1986 ed è un World Master che vive a Lione dove ha studiato presso il Liceo Edouard Erriot e la Scuola di Ingegneria CPE.
Scapolo, lavora nella sede lionese della Società di Consulenza Internazionale Arcadis.
Ha conosciuto il bridge frequentando un corso promosso dalla FFB in 4ª Liceo e dopo aver vinto alcuni titoli nazionali giovanili, si è messo in luce vincendo l'argento nei Campionati Mondiali Universitari a Squadre del 2010 e in quelli a Coppie nel 2011.
